Walnut Tacos Recipe!

What's for dinner? Walnut Tacos...Yumm!!



Okay, this is by far no beautiful display of dinner, but it is a realistic display of what happens when you come home from work hungry, ready to create something quick! Walnut Tacos are super delish, quick and easy...and my meat eating husband loves them too! I had already made fresh salsa the previous day when I had time (tomatoes, peppers, green onions, cilantro, lime juice and sea salt)-see jar on far left! To make guacamole, I simply mix some drained juice of the salsa and salsa itself with avocado. Next, I make the walnut meat.




Taco "Meat"

3 c. walnuts, soaked and dehydrated*

1-2 cloves garlic

2 Tbsp chili powder

1/4 tsp cayenne powder



1 tsp Bragg's liquid aminos



(*If you don't have a dehydrator or one that dehydrates at temperatures below 118 degrees, soak the walnuts for 4 hours, drain and rinse. Then place in a bowl uncovered in the fridge for several days, tossing 1-2x/day to make sure the damp ones on the bottom get dry too!)


-Combine all ingredients in a food processor.

-Process by pulsing until desired texture is acheived.

-Season to taste!

p.s. This makes a big batch, which keeps well in the fridge, or you can make a 1/2 batch.



Use lettuce as the shell (we like romaine). Add walnut "meat", salsa, guacamole, and any of the following...Kelp Granules, Brewer's Yeast, diced scallions, shredded carrots, sprouts, etc.
