Raw Rich Cheddar Cheese Sauce

Yummy in my tummy...I think you'll like this one. Super fast and easy...all you need is a Blender. This tastes delish with carrot and celery sticks, steamed broccoli and just about everything, I reckon. My hubby and I made raw tostadas. For the base, I put a bit of olive oil and Sea Salt on Ezekiel sprouted grain tortillas and dehydrated until crisp. We topped those with this rich cheddar sauce, diced romaine, fresh salsa and chopped avocado. It was a hit! The leftover cheese sauce made a great quick and yummy snack!

Raw Rich Cheddar Sauce

1/2 cup Organic Raw Cashews
1/2 cup sunflower seeds
1/2 large red bell pepper
1/4 cup water
2 Tbsp lemon juice
2 Tbsp nutritional yeast
1 Tbsp Organic Raw Tahini
1 1/2 tsp Sea Salt
1 clove garlic
2 tsp onion powder

Soak the nuts and seeds for several hours, rinse and drain. Put everything into the blender and voila!! Enjoy and let me know what you like it best with! XO, Kelly O

Raw Onion Bread!

Yum! You need a dehydrator for this recipe and it is delish! I got the recipe from www.goneraw.com, which is a great resource for recipes and sharing if you are ever looking for a favorite food of yours in its raw version, or are simply ready to try something new this week! I modified the recipe to what I had in the fridge and always add grated veggies to raw cracker or bread recipes to make them less rich...and they are still plenty rich! Here's what I came up with:

Raw Onion Bread

1 1/2 yellow onions
2 cups sunflowers seeds (soaked overnight,rinsed and drained)
2 cups pumpkin seeds (soaked overnight,rinsed and drained)
2 cups grated carrot
2 cups grated zucchini
1/2 cup Bragg's liquid aminos

Food Process 1 cup of the onions (diced), all of the seeds and Bragg's, and half of each of the grated veggies. This will take a few batches (don't fill the food processor more than halfway full). Combine in a large bowl with the remaining grated veggies and 1/2 onion (which is thinly sliced).
Spread
on teflex sheets about 1/4 inch thick and dehydrate on 145 degrees for 1 hour (good idea to set a timer!) Then reduce heat to 105 degrees. When dry enough to peel onion bread cleanly off teflex sheets, flip the bread and remove teflex sheets. Continue dehydrating until bread reaches your desired crispness!
I love this savory raw goodness! It is a great base for an open faced raw veggie burger, to dip in zucchini hummus, or simply a tasty side next to your big, beautiful fresh salad! Enjoy! XO, Kelly O

I saw this quote on a friend's fridge this weekend and was able to find it via the amazing world of Google, so I could quote it directly. May this be our mantra while we remain grounded in Faith and Trust, particularly as Election Day draws near. The Universe is unfolding exactly as it should! Walnut Tacos Recipe!

What's for dinner? Walnut Tacos...Yumm!!



Okay, this is by far no beautiful display of dinner, but it is a realistic display of what happens when you come home from work hungry, ready to create something quick! Walnut Tacos are super delish, quick and easy...and my meat eating husband loves them too! I had already made fresh salsa the previous day when I had time (tomatoes, peppers, green onions, cilantro, lime juice and sea salt)-see jar on far left! To make guacamole, I simply mix some drained juice of the salsa and salsa itself with avocado. Next, I make the walnut meat.




Taco "Meat"

3 c. walnuts, soaked and dehydrated*

1-2 cloves garlic

2 Tbsp chili powder

1/4 tsp cayenne powder



1 tsp Bragg's liquid aminos



(*If you don't have a dehydrator or one that dehydrates at temperatures below 118 degrees, soak the walnuts for 4 hours, drain and rinse. Then place in a bowl uncovered in the fridge for several days, tossing 1-2x/day to make sure the damp ones on the bottom get dry too!)


-Combine all ingredients in a food processor.

-Process by pulsing until desired texture is acheived.

-Season to taste!

p.s. This makes a big batch, which keeps well in the fridge, or you can make a 1/2 batch.



Use lettuce as the shell (we like romaine). Add walnut "meat", salsa, guacamole, and any of the following...Kelp Granules, Brewer's Yeast, diced scallions, shredded carrots, sprouts, etc.

Fall musings and Fruit rollup pics

Fall is so bittersweet. The gorgeous golden glow of the forest, the mystical chilled wind, the natural slowing down, the falling leaves. It dropped to 22 degrees this week. I thought the plants inside the hoophouse would still be free from frost, but I was wrong! The chard and greens are still kickin' but all those tomato,tomatillo and basil plants we have been nurturing are wilted into oblivion, making the slow decomposition back to the Earth. Such a beautiful rhythm!
And we have really great news! We have invested in a geodesic dome greenhouse!! Yahoo!! On October 16th, the pieces are leaving Colorado (thanks to www.growingspaces.com) and we expect them to arrive a few days later! We are so excited to become more and more self-sustainable and be able to grow fresh produce year-round in northern Montana! This is going to be quite an experimental adventure and I will be sure to post lots of photos along the way! It should be a stark contrast to my Juice Feasting adventure last January. For that month of radically abundant produce, I was able to get all the organic produce I wanted from our local Health Food store, mostly venturing from California and Washington. This Winter's produce will be right from our own property, not to mention the deep Joy I celebrate in when working with plants! Very exciting!

Also, I made another batch of raw fruit rollups from some apples I harvested locally and took some pics this time!
First, I chopped the apples and filled my Blendtec. I had some fresh apple cider we had pressed, so I added about a cup of that per blender batch, but that is optional. Simply add enough water to make the fruit blend. (I didn't have to add any water when I made the plum, apple rollups.) I also added a little cinnamon, nutmeg and cloves. Blend!



Then, spread it thick on teflex sheets and dehydrate at 105 degrees...


This time, I didn't roll them in wax paper and it worked great! A super delish snack that is great for the trails, road trips and camping!

Halloween Candy



Speaking of the bittersweetness of Fall, sugar season is coming! It is estimated that in the U.S., we spend $1 billion dollars on Halloween candy! We buy 20 million pounds of candy corn alone! Every year, teenagers eat 93 pounds of refined sugar on average. (Thanks to Dr. Mercola for these statistics.) Wow! We are moving into the next 6 months where Standard American media bombard our senses, but thank goodness for the Power of Choice. It all begins with SUGAR, SUGAR, SUGAR for Halloween, then overeating at Thanksgiving, overeating and sugar for Christmas, Guilt and new resolutions for the New Year, sugar for Valentine's Day and Easter and then panic when bikini season returns with the sun. Wow, that sounded incredibly pessimistic!!

How about a change of focus and perspective...


Halloween - a time of abundant creativity, laughter and pumpkin carving parties!
Thanksgiving - a time for connecting with family and friends to give up Thanks in deep Gratitude (and cool,late morning football!)

New Year's - a time of both introspection and Joyous celebration to invoke our highest potential!
Valentine's Day - a special celebration of true LOVE in our lives!
and Easter - well, that depends on your belief system, but nonetheless, a great reason to gather with the ones you love!


We don't get Trick-or-Treaters at home since we are a bit out of town, but my massage practice is located downtown (check out www.RollingMirrorMassage.com) and we get tons of adorable little ones during the day. Last year, I just couldn't make myself hand out candy even though I love being able to give to all those cute little cowboys and bright eyed angels! This year, I decided to hand out some other fun stuff instead! I was able to find fun Halloween pencils, spider/skull rings and colorful puffy stickers. Hopefully I won't become known as "that lady" that you never want to go to her house because she hands out pennies! I thought this bowl of Halloween treats looked pretty fun! Raw Protein Powder

We have been enjoying glorious 80 degree Indian summer days! They are so deeply savored here because we know they won't be back for a long time! The forecast is calling for...Fall in Montana...highs in the 50's and 60's and rain showers. Time for firewood-getting and all those little things I need to do, but have been putting off for a rainy day! It is a beautiful, natural slowing down that happens this time of year and the larch tree pine needles are beginning to glow in gold!

I make (and deliciously savor!) a green smoothie nearly everyday. The basis is frozen fruit, fresh greens and water. Berries are probably the best nutritionally and tastiest fruit to use and I also use lots of pears and plums that I harvest locally and freeze. For greens, my favorites are lacinato Kale and spinach. I also use lots of chard, wild lamb's quarter and even spring mix that needs to be used.
